diet. I really miss pizza. I mean I crave pizza. I would
like a recipe for something which tastes enough like pizza
to satisfy me but which is reasonably healthy.
Grilled Veggie Pizzas
Serves 4 Prep Time: 25 min 1 small unpeeled eggplant 1 small
zucchini 1 red pepper 3 Tbsp olive oil 2 oz crumbled feta
cheese 1 tub 2/3 ounces, fresh basil, cut into strips 1
Vidalia onion 2 pkg Wegmans Italian Classics 6 inch Original
Gourmet Flat Breads
Cut eggplant, zucchini, pepper and onion into equal size
pieces, about one inch cubes. Toss vegetables with 2 Tbsp
olive oil. Place vegetables in preheated grill topper and
grill on high for 10 to 15 minutes, stirring occasionally.
Heat flat breads on grill rack for 1 min on each side. Spoon
vegetables over individual flat breads. Season with freshly
ground pepper. Drizzle with remaining oil and sprinkle basil
and cheese on top.
Nutrition Info: Each serving (1/4 of recipe) contains 474
calories, 65g carbohydrate (5g fiber), 15g protein, 19g fat
(6g saturated fat), 13mg cholesterol and 940mg sodium.
