  1. Louis' Strawberry Cheesecake Pie

    Serves 8
    Recipe By: Terry Pogue

    1 pillsbury Pie Crust -- or make your own
    8 ounces Cream Cheese -- room temperature
    1/2 cup Sugar
    2 whole eggs -- room temperature
    1 whole Lemon, the juice of and the zest of
    2 to 3 cups Strawberries -- cut in half and sweetened
    splash Chambord or Grand Marnier

    Blind bake the pie crust until lightly browned. to bake the pie preheat
    the oven to 325F. Mix the room temperature cream cheese with the room
    temperature eggs, the zest of one lemon, the juice of one lemon, and 1/2
    cup sugar. When throughly mixed add 1 cups of strawberries. Fill the
    baked pie shell then sprinkle the rest of the berries over the top.
    Protect the pie crust edges from over-browning with strips of aluminum
    foil. Bake for 35 minutes at 325. Refrigerate for two hours before
    cutting.
