  1. Loubeh (Stewed Green Beans)

    2 lb green beans, cleaned and cut in half
    2 tablespoons olive oil
    1 medium onion, chopped
    3 cloves garlic, peeled and chopped
    1 lb. ripe tomatoes, chopped
    Salt and pepper to taste
    Stir fry the onion with olives. Add the beans, garlic, salt and pepper to
    the stir fry.

    Add the tomatoes and bring to a boil. Lower the heat and simmer until the
    beans are cooked and the sauce is thickened.
    Serve cold or hot with pita.
    Rice and green onion makes 6 servings.
    Meat version: Use the same ingredients for loubeh but add 1 lb. of meat,
    lamb or beef cubes. After stir frying the onion, add the meat continue
    exactly.
    For the vegetarian version, serve over rice.
