Tyrosalata
1 lb feta cheese
1/4 cup Greek olive oil
1 tablespoon snipped fresh chives
1/4 teaspoon dried oregano, crushed
1 garlic clove fine minced, then mashed to a paste
Whip feta until smooth and fluffy. Thoroughly blend in remaining
ingredients, then pile in serving bowl, cover and refrigerate until serving
time.
Some versions include roasted red pepper or pimiento.
