  1. I'm needing a recipe for pumpkin muffins made from canned pumpkin.
    We usually give out homemade cookies for halloween and I'm thinking it's
    time for a change. I'd like to sprinkle orange sugar on top before
    baking. Can anyone help? Thanks a bunch....Sharon

    I like this one with cranberries. I suppose you could leave them out if
    you don't care for them..Cranberry Pumpkin Muffins

    Pumpkin-Cranberry Muffins

    2 cups flour
    1/2 cup brown sugar
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon salt
    1 cup pumpkin puree
    2 cups fresh or frozen cranberries, coarsely chopped
    1/2 cup oil
    1/4 cup milk
    1/4 cup molasses
    1 egg, lightly beaten

    Combine flour, brown sugar, baking soda, cinnamon, nutmeg, and salt in a
    medium mixing bowl. Combine remaining ingredients in a separate mixing
    bowl. Add wet ingredients to dry, mixing just until the dry ingredients are
    moist. Do not overmix. Generously grease a 12-muffin tin and dust with
    flour or line with paper muffin cups. Fill muffin cups about 2/3-full with
    batter. Bake pumpkin muffins in preheated 350° oven for 25 to 30 minutes,
    or until nicely browned. Remove pumpkin muffins from tins to wire rack to
    cool. Makes 12 cranberry pumpkin muffins.

    Use a pumpkin bread (quick bread, not yeasted dough) recipe (most
    recipes have oil and about 4 eggs) and bake in muffin tins until done -
    20-25 minutes? Fake it. If you want the orange sugar to show up, ice
    the cupcakes (whoops, muffins!) with a cream cheese icing and then
    sprinkle the orange sugar on top. Good luck and let us know how they
    come out.

    From 'The Joy of Muffins'
    (have never made these)

    Pumpkin pecan muffins [Oven at 375 F Makes 22 muffins]

    2 3/4 cups flour
    1 tbs baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1 tsp nutmeg
    1 tsp ginger
    1 cup chopped pecans

    Mix well in a large bowl.

    In another bowl whisk together:

    2 eggs
    2 cups pumpkin puree
    1 cup sour cream
    1/4 cup light molasses
    3/4 cup brown sugar

    Pour liquid ingredients into dry ingredients and mix quickly. Spoon into
    greased muffin tins.
    Bake at 375 F about 25 minutes until light brown.
