Locks are only as good as the object to which you secure them. I have heard of U locks being opened by the leverage of a properly applied 2x4. Then there's freezing with liquid nitrogen followed by a good stiff whacking with a hammer. Dremel tools with a cut-off blade work too. Of course, If you lock the bike to a sapling with a U-lock, it will be easier to cut the tree than the lock.
Most thieves aren't going to come prepared with liquid nitrogen, dremel tools, etc., so as long as your bike is harder to get than the one next to your's you won't have much trouble. Of course, if you ride a $8k bike, and leave it parked unattended in the same place for many hours every day, someone may make plans and come more prepared.
