  1. Light Mocha Cheesecake
    Low Fat Iced Mocha Latte

    Light Mocha Cheesecake

    Servings: Makes one (9-inch) cheesecake

    Prep Time: 15 minutes
    Cook Time: 45 minutes
    Total Time: 60 minutes

    Crust:
    1 cup graham cracker crumbs
    1/4 cup sugar

    Filling:
    1 tablespoon instant coffee granules
    1 tablespoon water
    3 (8-ounce) packages low fat cream cheese (not tub cream cheese)
    2 tablespoons all-purpose flour,
    1/3 cup cocoa, unsweetened
    1 (14-ounce) can Eagle Brand Fat Free Sweetened Condensed Milk (not
    evaporated milk)
    1/4 cup coffee liqueur
    1 teaspoon vanilla extract
    3/4 cups egg substitute product, fat free, cholesterol free

    Preheat oven to 325 . Combine graham cracker crumbs and sugar; press
    firmly on bottom of sprayed 9-inch springform pan. Dissolve coffee in
    water. In large bowl, beat cream cheese until fluffy. Slowly add flour and
    unsweetened cocoa; mix well. Slowly add Eagle Brand; mix until smooth. Add
    coffee mixture, liqueur, vanilla extract and egg substitute product; mix
    until blended. Pour filling into pan. Bake 40 to 45 minutes or until
    center is set. Cool 10 minutes; with thin knife, carefully loosen
    cheesecake from side of pan. Cool. Chill. Store leftovers covered in
    refrigerator.

    Low Fat Iced Mocha Latte

    Servings: Makes 5 cups

    Prep Time: 5 minutes

    2 tablespoons instant coffee
    3/4 cup warm water
    1 (14-ounce) can eagle brand low fat sweetened condensed milk (NOT
    evaporated milk)
    1 tablespoon chocolate-flavored syrup
    4 cups ice cubes

    In small bowl, dissolve coffee in water. In blender, combine dissolved
    coffee, Eagle Brand and syrup; blend well. Gradually add ice, blending
    until smooth. Serve immediately. Store leftovers in refrigerator.

    Calories: 250 Fat: 3 grams
