done some surfing on the trainline.com and found I can get
a single train ticket to Penzance for £34 with changes at
Brissol Parkway and Plymouth. What do we think of changing
at these stations, easy with a bike ? What about bikes on
these trains ?

Presumably that'll be First Great Western? If so, yes they
take bikes, but you have to pay a quid if you reserve more
than <small
number> of hours before the train leaves, otherwise it's 3
number> quid.
Tandems get charged as 2 bikes. The service from Paddington
to Cornwall has a huge great guards van, make sure you know
which end it will be, as they wait for no man.
