We had chicken left over from mother's day, but I decided to do something different with it. I was thinking about slicing it thin and making sandwiches, but I was in the mood for something Italian. So, I made a tomato sauce from the last of the frozen fresh tomatoes from last year, along with some other bits and pieces, and simmered the 2 leftover cordon bleus in the sauce for a while. Served it with some linguini with an alfredo-ish sauce that I had left over as well. I might buy the chicken again just to serve it this way.
