You hard-cook the egg, peel it and put it into the form while it's still warm. Pop it into ice water for about 15 minutes and it's a square egg.
We used to do them for our salads in one of my restaurants. A customer once said, "I'd love to have seen the look on that chicken when she saw *that* egg..."
