  1. King Ranch Casserole

    1 whole, cooked chicken cut into bite-sized pieces
    (or equivalent in turkey)
    12 corn tortillas - cut into 1" diamonds
    (do not use regular flour ones it changes texture)
    optional chopped veggies - scallions, celery, bell pepper, mushrooms
    2 cans of cream soup (mushroom, celery, chicken)
    1 can of Ro-Tel chopped tomatoes with green chilis.
    diced red onion
    shredded cheese
    fajita, cajun, or southwest spice mix

    Toss the chicken, tortillas, vegetables into 13x9 pan Pour over this a
    combinaton of two cans of cream soup (mushroom, celery, chicken) can of
    Ro-Tel chopped tomatoes w/ green chilis. Top with diced red onion (use
    red for color) and shredded cheese - there is a 4-type Mexican blend
    that works great and sprinkle with a fajita, cajun, or southwest spice
    mix. Bake at 325 for 1/2 hour
