  1. Karen's Salad

    Serves 6
    Recipe By: Karen Braun

    1 5 oz. bag mixed greens
    2 granny smith apples (peeled, cored, cut into matchsticks)
    1/2 cup 1/2 cup dried cherries (I used cherry flavored craisins
    which I bought at Giant. The dried cherries which I bought at Sutton
    Place were, I decided, too big and too sweet)
    1/2 cup 1/2 cup coarsely chopped walnuts
    Whisk together:
    1/4 cup 1/4 cup mayonnaise
    1/4 cup 1/4 cup maple syrup
    3 TBSP white vinegar
    2 tsp. sugar

    Slowly add while whisking: 1/2 cup vegetable oil I mix the greens and apples (unless
    you have very small apples, you will find you have more apple than you need), and then
    dress the greens (you will also have extra dressing left over). I plate the salad and
    then add the craisins and walnuts on top. The recipe doesnt say to serve that way, but
    the first time I tossed everything together and the small stuff wasnt distributed
    evenly. Dressing (can be made up to 3 days ahead, cover and refrigerate. Re- whisk
    before using, if necessary.)
