Jordan Marsh Muffins
Named after the now-defunct Boston-area department
store.
8 tablespoons butter
1 cup sugar
2 large eggs
1/2 teaspoon salt
2 cups flour
2 teaspoons baking powder
2 1/2 cups fresh blueberries
1/2 cup milk
2 tablespoons granulated sugar (for topping)
Cream the butter, sugar, and salt. Add eggs one at a
time, mixing well after each addition. Sift flour and
baking powder together and add alternately with the
milk, mixing well each time. The batter should be very
smooth and cake-like. Mash 1/2 cup of the berries and
stir in (this gives the muffins extra flavor and their
distinctive slight blue tinge). Gently stir in the
whole berries and the vanilla. Fill paper-lined muffin
cups full to the top and sprinkle sugar on top of each
muffin. Bake at 375 degrees for 25-30 minutes. Makes
12 muffins.
