    I have a recipe that calls for a lean beef chuck. Whole Foods has
    beef chuck shoulder steak on sale this week. Is shoulder steak
    considered lean?

    Typically not. But it further depends on the butcher's trim. Usually,
    shoulder cuts are rather marbled. Chuck isn't usually lean, either.
    Why worry about it? Depending on the kind of recipe, cooking the meat
    will render fat. Discard it.
