I have a 26x1.25 tire on my MTB.
I'm wondering if I can use a tube that's marked 26x1.5-2.0 in it?
(I have a bunch of those on hand, and would like to use them if they'd
work).

Yes.
Inner tube sizing is always just a guide. The same tubes fit 700c and
27" tyres. If you can stuff it in it'll be fine.
