    Haven't tried this one, but found this book at the local discount
    store:

    Potato stuffed Fried Flaky Bread -Paratha

    Dough
    2 cups plain flour
    Scant 1/4 cup milk
    10 teaspoons yogurt
    1/4 cup water
    1 tablespoon ghee or butter
    1/2 teaspoon salt

    Potato stuffing
    1 large potato, boiled an mashed, about 8 oz
    2 green chilies, finely chopped
    3 tablespoons finely chopped cilantro leaves
    1 medium onion, finely chopped
    1 teaspoon salt
    1/2 teaspoon carom seeds (ajowan)

    Combine dough ingrdients in a bowl and mix well. Knead until dough is
    pliable about 10 minutes. Divide into 4 equal portions and shape into
    balls.

    Mix all the potato stuffing ingredients thoroughly. Divide into 4
    portions.

    Flatten a piece of dough slightly. Put a portion of the potato
    stuffing on it and roll up to enclose filling. Place the filled dough
    on a lightly floured surface and roll out into a 1/2" thick circle.

    Heat a lightly greased griddle or shallow frying pan. Place the
    stuffed piece of dough on it and cook over medium heat until the
    underside is golden brown, about 5 mintues. Turn over and cook the
    other side for 5 minutes. Keept he cooked bread warm while cooking
    the remaining pieces.

    Deep fried Spiced Bread Methi Puri

    2 tablespoons ghee or oil
    2 cups plain flour
    2 tablespoons dried fenugreek leaves
    3 tablespoons finely chopped cilantro leaves
    1-1/2 teaspoons ground red pepper
    1 teaspoon cumin seeds
    1/2 teaspoon asafoetida powder
    1/2 teaspoon turmeric powder
    1 teaspoon salt
    3/4 cup water
    Oil for deep-frying

    Rub the ghee or oil into the flour until the mixture resembles fine
    breadcrumbs.

    Add the rest of the ingredients, except the oil and mix well, then
    knead to form a soft pliable dough, about 10 minutes. Cover the dough
    and set aside for 15 minutes.

    Divide the dought into 6 portions and roll out each portion into a
    thin circle.

    Heat oil for deep frying and fry the dough, one piece at a time, inv
    ery hot oil, at least 365F (185C) until golden brown, about 1-2
    minutes per side.
