ideas for Dinner Party tonight

  1. I am making salmon (probably with rosemary, butter & oil) and I dunno what
    else. i am on Atkins Induction and want to make nice things everyone can
    eat - it's just us and another couple. i figure I can make a salad w/oil &
    vinegar and have italian bread for the guests. then maybe make broccoli (i
    make that with garlic and oil) and I just won't eat too much of it...

    what's an idea for a veggie on the side that's not too carby and not too
    boring? What goes nicely with Salmon - I think the broccoli may be too
    "heavy". Maybe I'll do asparagus?

  2. Depends on what you have on hand. I buy Costco's big bags of frozen baby
    green beans. They are great with a bit of sour cream and dill. Asparagus
    is good with anything, too.

  3. ROASTED ASPARAGUS WITH FETA

    Active time: 10 min Start to finish: 25 min

    2 1/2 lb medium asparagus, trimmed
    2 tablespoons extra-virgin olive oil
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    2 oz feta (preferably French), crumbled (1/2 cup)

    \Put oven rack in lower third of oven and preheat oven to 500°F.
    Toss asparagus with oil, salt, and pepper in a large shallow baking pan
    and arrange in 1 layer. Roast, shaking pan once about halfway through
    roasting, until asparagus is just tender when pierced with a fork, 8 to
    14 minutes total. Serve asparagus sprinkled with cheese.

    Makes 6 servings.
