  1. I really don't like cheese...at all! However, in most cookbooks, even diet
ones, I keep finding lots of cheese mentioned either in the recipe or as a
snack, even Weight Watchers. What I'm wondering is what could be
substituted for cheese in the recipes or snacks?

First off, are you sure you hate cheese? There are so many different
kinds, and the tastes can vary extremely. Second, what specific recipes
are you talking about? You could easily do low-carb without eating cheese.
Vegetable stir fry with beef, chicken, pork, or shrimp. Fried or scrambled
eggs and sausage. Salads of endless varieties. A steak, or grilled
chicken, or fish, or shrimp scampi with steamed brocolli or cauliflower on
the side. For snacks: hard boiled eggs, pepperoni, beef jerky, some types
of nuts, pork rinds, celery sticks with sugar-free peanut butter. Not
liking cheese may even end up being of benefit to you in the long run,
since it's so calorie dense and people who like it (like me) find it a wee
    bit addictive.

I have only 3 flaws. My first flaw is thinking that I only have 3 flaws.

What Luna said. If you hate cheese, there's no need to hunt down
substitutes. There are plenty of low-carb alternatives to cheese. I
personally love cheese, but we're all different, aren't we?
