I recently purchased a Ritchey Pro Adjustable stem. When I loosened the bolt in the elbow portion of the adjusting joint, I found that the joint was set into position by a tightly fitted, toothed sprocket(?). I didn't want to damage it by trying to hammer the sprocket out of its setting, but I couldn't figure out how to easily remove the sprocket from the other portion of the stem without possibly damaging it. Is there a special tool that I need or a technique to do this properly?

If you look carefully at the underside of the stem, I think that you will find a bolt that secures an "L" shaped piece of metal. Loosen the bolt and pull the "L" out of the toothed sprocket and the stem will move freely.

There was no bolt. However, I was able to loosen the sprocket by holding the fork steady and pulling the two pieces of the stem joint apart. Once dislodged, it was easier to assemble and disassemble. It must have been stuck.
