Hot Spinach Dip
Spinach Dip
2 packages (10 oz each) frozen chopped spinach
1/4 cup margarine
2 tablespoons all-purpose flour
1/2 cup evaporated milk
1/2 cup spinach liquid
6 oz jalapeno pepper cheese, grated
1/2 teaspoon freshly ground pepper
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
1/2 teaspoon Worcester sauce
Preheat oven to 350F. Butter a 1-quart baking dish. Cook the
spinach according to package instructions and drain well, reserving
1/2 cup liquid. Melt the margarine in a heavy saucepan over low
heat. Add the flour and cook for 3 minutes, stirring constantly;
do not brown. Add the evaporated milk and spinach liquid and
continue to cook, stirring, until the mixture thickens. Add the
cheese, pepper, celery salt, and Worcestershire and stir until the
cheese melts. Fold in the Spinach. Transfer the mixture to the
prepared casserole and bake until it starts to bubble, about 15
minutes. Serve with tortilla chips.
