  1. Hot Cross Loaf

    Hot cross buns converted for a bread machine. For a
    large loaf:

    3 teaspoons yeast 3 cups bread flour 3 tablespoons sugar 3
    tablespoons whole milk powder (can use soy milk powder) 1
    1/2 teaspoons salt 1 tablespoon ground cinnamon 1 tablespoon
    mixed spice 1 teaspoon ground cloves 3 tablespoons oil 1 1/8
    cups egg(s) and water (I use two eggs, beat and top up to
    the right amount - can be made without eggs) dried fruit -
    sultanas, raisins, currants, mixed peel, dried apricots,
    chopped ginger, etc etc, about 1 cup.

    Use fruit bread setting, or add fruit just before the end
    of the mixing cycle so it doesn't get too broken up. Follow
    machine instructions for ingredient order and cooking. Can
    be made overnight (but it is probably best not to use eggs
    on the time delay cycle, and the fruit will get more
    'mushed up'😉.
