Country Fair Corn Dogs

My kids love corn dogs. I would like to make them at home and freeze
them. Then they can be heated in the microwave. Any recipes apprecieted.

Corn Dogs
3/4 cup yellow cornmeal
3/4 cup flour
1 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
2/3 cup milk
10 small wooden sticks
10 hot dogs
Oil for deep-fat frying
Combine cornmeal, flour and egg; mix well. Stir in milk to make a thick
batter; let stand 4 minutes. Insert sticks in hot dogs; dip into batter.
Heat oil to 375 degrees F. Fry until golden brown, about 5-6 minutes.
Drain
on paper towel.

10 frankfurters
10 wooden skewers
Batter:
2/3 cup stone ground corn meal
1/3 cup unbleached all purpose flour
2 tablespoons corn flour (optional)
1 teaspoon salt
good pinch white pepper or cayenne
1 egg
2 tablespoons oil
1/2 cup seltzer or plain water (adjust as required)
flour for dusting
oil for frying
mustard (or whatever you like) for dipping
Mix all ingredients for batter with a whisk in large bowl. Insert
skewers in
franks and dust with flour. Roll or dip into batter.
Heat oil in a large wok or cast iron skillet to about 375 F. Fry a
couple of
corn dogs at a time until they are lightly browned. Drain on paper
towels.
