sorry you didn't get any replies but as you're here on a work day it makes it kinda hard. Anyway, here's my 2c worth.
If you only have 4 or 5 hours, you're going to have to stick fairly close to the airport. Grab a cab and head to Circular Quay (around 20 mins). From there you can get a ferry to Manly (I think @ 45 minutes - it's been a long while since I did it). It's got a great beach and the ride along the harbour will be spectacular. Head back to the Quay and then wander down to the Rocks. Nice historic area with lots of quaint pubs and shops.
From the Rocks you can access the walkways onto the Harbour Bridge. Walk up there and then climb the pylon on the south side of the bridge. You get a great view all around the harbour and you look down onto the Opera House. On a nice day you can see for miles.
Back down and then walk around to the Opera House for a close look. If you still have time leftover, get around to Darling Harbour (cab would be easiest - it's about a 20 minute walk) for some shopping etc.
If you did all this in four or 5 hours you'll be stuffed and glad to head back to the airport🙂
