Heroin Wings Heresy

  1. I made the famous Heroin Wings a couple of weeks ago and wasn't too
    impressed, thought they were a bit bland. That's the heresy. So tonight I
    made them again but I basically just mixed grated parmesan with Cajun
    seasoning. Much better! They had a nice spicy zing to them. The Cajun
    seasoning has salt in so didn't need to add any. Last time I also shook the
    wings up in a bag with the cheese after dipping them in butter, didn't think
    that worked real well, a lot of cheese stuck to the bag and the wings seemed
    to have too much butter when I dipped them So this time I shook them in a
    bag with the butter and then rolled them in the cheese mix, it worked much
    better. Baked them at 400° instead of 350°, too, as these were very fat
    wings and I didn't think they got crispy enough the first time.

    Thanks for the tips. I haven't tried these yet, but have been meaning
    to. Cajun seasoning has become our most-used spice.

  4. Sorry, I don't measure. Probably about 1/3 as much Cajun season as
    Parmesan by volume.
