Really, it depends upon your leg length vs your torso length. How does the bike you're riding now work for you?

At six feet with a 81 cm inseam, your proportions are pretty average, maybe just a bit on the stumpy side. If you go smaller, chances are the bike will be too short in the top tube, and larger will just mean dragging more bike around than you need to handle. The bike probably comes with 175 or 172.5 mm cranks. Either of which would be appropriate for your size. I would pay attention to stem length and fore-aft adjust of the saddle, however. Make sure you're getting enough upper-body stretch.
