I am having a Fiesta for about 35 adults and about 10 kids. (children range
from 1 to age 6)
I have no idea how to determine how much food to make. I wasn't having luck
googling.
The menu will be:
Ground Beef (for tacos/soft tacos)
Chicken Breast (cut up for tacos/soft tacos)
Refried Beans (would black beans be better? I want to keep it simple)
Salad (as a side or for a Taco Salad base)
Grilled corn on the cob
Chicken nuggets & Fries for the kids
all the taco fixins: taco shells, soft tortillas, sour cream, guacamole,
shredded cheese, chopped onion, salsa
Also Margaritas, coronas and kiddie drinks.
I am cooking myself and using hot trays w/sternos. I was going to do a
half-tray of each meat, half tray of the beans, full tray of salad. Do
quarter trays exist? I don't think I need a half tray of fries & nuggets
each, I just want an alternative for the kids.
Chicken breast is on sale rightnow so i want to stock up but I am at a loss
as to quatity! Also I don't know if I should go with a lean ground beef or a
fattier one for taste.
Any input, advice, tips and help will be greatly appreciated!!
