for someone with a normal cholesterol level, but with a very high
triglyceride level (around 500).

My brother has very high TGs, but I have low TGs. His diet is the
typical American processed food diet, while I make all my own food,
avoiding oxidized cholesterol and any major source of unsaturated fat,
and I eat antioxidant-rich foods, such as berries, prunes, dark
chocolate, etc. I eat large amounts of butter, yogurt, cheese, ice
cream, coconut (mostly shredded), fruit, and boiled eggs. I eat small
amounts of bread with no fat or tiny amounts of fat. The dairy is
always whole milk and nothing is homogenized, and there are no
additives, such as carrageenan, locust bean, etc. Switch to this diet
and you'll see results in a couple of weeks, though full results take
two years, give or take a couple of months. I'm on it now for about 4
years. Only benefits have resulted from it.

Numbers that high often suggest over consumption of sugars and overly
refined carbohydrates such as polished rice, white breads, pastas,
potatoes, etc. as compared to fat and protein levels. Switch to whole
grains and use moderate levels of the above or skip many of them in place
of more mono fats and more proteins and increase more fiber laden and
water containing vegetables of many kinds.
I would guess your hdl lipid numbers are low also which often goes along
with high trigs. As a more general concern, diabetes is often signaled by
trig levels such as these. Did your doc do a glucose and an a1c test to
see if diabetes is a possible concern?

This part I do not understand. You eat a lot of butter, but you never
put it on the bread? 🙂
BTW, are you aware that any animal product contains a fair amount of
essencial fatty acids (esp. a lot of omega-6) that you are so loudly
trying to avoid?
