Help! Touring bike or not touring bike...

If I'm looking to do a trip on 75% roads, 20% dry dirt and sand roads, 5% a bit of mud, am I mad to use a Dawes Super Galaxy?

If not, which steel frame, compact geometry bikes should I look at and what kind of set-up do you recommend?
