  1. Halibut Steak with Garlic Butter

    Butter and garlic are a natural companion to fish. Add some parsley,
    shallot and a few other goodies, and you have one yummy fish dish!

    1 cup (240 ml) unsalted butter, softened
    1 Tbsp (15 ml) chopped fresh parsley
    1 shallot, chopped
    2 garlic cloves, smashed and chopped
    1 large halibut steak, cut into 2
    Pepper
    Lemon juice
    Tabasco sauce

    Mix butter with parsley; then add shallot and garlic. Using wooden spoon,
    mix until well blended. Season to taste with pepper, lemon
    juice and Tabasco sauce. Mix again until thoroughly incorporated.

    Butter baking dish with some of the garlic butter. Add fish and spread
    more garlic butter on top. Pepper well.
    Place in preheated oven and broil 7 minutes.
    Turn fish over, spread with more garlic butter and continue broiling 7 to
    8 minutes. Adjust time depending on size.
    Makes 2 servings.
