    Looking for Gullah Rice

    Gullah Rice
    Makes 6 Servings

    2 pounds smoked sausage, sliced 1/2-inch thick
    1 medium onion, chopped
    1 red pepper, chopped
    2 cups uncooked rice
    1 or 2 tablespoons Texas Pete
    2 large tomatoes, chopped
    2 1/2 cups chicken stock
    1 cup cooked black beans Coarse salt

    Using a large saucepan over medium high heat, add the sausage and cook
    until browned
    Remove and drain on plate lined with paper towels
    Add onion and red pepper and saute, stirring frequently until softened,
    about 3 minutes
    Add rice and saute for 1 minute
    Add hot sauce, sausage and tomatoes, and season with salt
    Add chicken stock, bring to a boil, reduce heat and simmer covered until
    rice is cooked, about 20 minutes
    Gently fold in beans and heat through
