  1. I will be making a cookie recipe that calls for ground almonds in the
    dough. Can I grind whole roasted almonds with the skins on, or do I
    first need to blanch and peel the almonds? I could buy slivered
    almonds with the skins removed, but I already have whole almonds in my
    pantry and would prefer to use what I have on hand.

    Skins or no, doesn't make much difference in most cookie recipes unless
    the cookies are supposed to end up totally white or something. Make
    sure you quit grinding just before it turns into almond paste. ;-)
