  1. Greek Gouvechi

    16 oz orzo pasta
    16 oz diced tomatoes
    6 oz tomato paste
    32 oz beef broth
    1 lb cubed leg of lamb or sirloin beef
    8 cloves garlic chopped
    1 cup minced sweet onion
    2 Tbsp extra virgin olive oil
    2 Tbsp dried oregano
    5 bay leaves
    salt to taste is optional

    In the bottom of a brasier pan or a dutch oven saute garlic and onion in
    the extra virgin olive oil. Add the bay leaf, oregano, diced tomatoes,
    tomato paste and beef broth. Simmer over medium heat for 30 minutes. Add
    the orzo and the cubed meat and simmer an additional 30 minutes. Remove
    the bay leaves.

    Serve with grated parmesan cheese and enjoy this savory and delicious
    Greek dish.
