  1. Gina's Collard Greens

    Serves 12
    Recipe By: Gina Neely

    5bundles collard greens
    3 cup salted water
    3largesmoked ham hocks
    1 cup sugar
    1/2 cup salt
    3 tablespoons crushed red pepper flakes

    Thoroughly wash collard greens, be sure to pull leaves apart and
    remove any sand. In a medium saucepan, bring 3 cup s of salted water
    to a simmer. Place smoked ham hocks in salted water and cover. Cook
    ham hocks until slightly tender and remove from pan. In the same
    saucepan, add collard greens and remaining ingredients. Cover and
    cook greens for 2 1/2 to 3 hours until water reduces, add more water
    and additional salt and sugar, to taste.

    Prep Time: 10 minutes
    Cook Time: 3 hours 10 minutes
    Yield: 12 servings

    Recipe Notes

    3 tablespoons of crushed red pepper might make it too hot for you.
    Adjust to suit your taste.
