fruit sandwiches
any of the following fruit: fresh strawberries peaches
(canned ok) bananas heavy whipping cream sugar japanese or
korean style white bread*
prepare the fruit. the strawberries, peaches and bananas
should be sliced to between 1/8 and 1/4 inch thick. take the
time to ensure that the slices are of uniform thickness
whip the whipping cream. add a little bit of sugar, maybe
a table- spoon or two. the whipped cream should just be a
little sweet, but definitely do not leave the whipped
cream plain.
assemble: spread a modest amount of the sweetened whipped
cream on two slices of bread. not too generous, but dont be
stingy either! place a single layer of one kind of fruit on
one of the slices, ensuring that all of the bread area is
covered. combine a plain slice with a fruited slice. trim
off the crusts. cut into thirds (for neat and dainty
fingers) or into half.
the sandwiches should be purdy. and neat. dainty and
ladylike.
the final effect is delicious, kind of like a less sweet
version of a fruit shortcake. i particularly like strawberry
sandwiches this time of the year.
* this MUST be japanese or korean style white bread. buy
from a japanese or korean bakery.
