You just adjust the front mech stop bolts, then it can go no further, no
matter how hard you push on the lever.

The derailleur's limit screw will prevent shifting to the third position.

I'm sure that the usual suspects such as Mr. Biggs will be along shortly
to provide a comprehensive answer butin the meantime...

I believe that if your front mech is from the Shimano road series (105,
Sora, Tiagra, Ultegra, Durace) then they will be incompatible with
shifters designed for flat-barred mountain bike stuff. MTB shifters pull
a different amount of cable per click than road shifters.

In the event that I'm talking bollocks, or your front mech is a MTB one,
then the limit screws on your front mech will stop the mech from moving
too far. If you set up your system so that you use "clicks" 2 & 3 (the
equivalent of middle and big ring) then if you inadvertently move it to
click 1 (granny ring) then all that will happen is your gear cable will
go slack (a ghost shift).
