    Frog Eye Salad

    3/4 cup sugar
    2 tablespoons flour
    1/2 teaspoon salt
    2 eggs, beaten
    2 tablespoons lemon juice
    1 cup miniature marshmallows
    8 ounces acini de pepe
    1 3/4 cup fruit juice, drained from oranges, pineapple, and fruit
    cocktail
    1 can mandarin oranges
    1 can crushed pineapple
    1 can fruit cocktail
    1 cup sour cream
    1/2 cup chopped nuts
    1/2 cup flaked or shredded coconut

    Combine sugar, flour and salt. Gradually stir in fruit juice and eggs;
    cook over medium heat till thickened, stirring constantly. Add lemon
    juice; let cool. Cook acini de pepe in boiling, salted water, adding a
    little oil to prevent boil over. Boil till tender. Drain; rinse with
    cold water and let cool. Combine with sauce mixture. Refrigerate
    overnight. Add the rest of the ingredients. This can be kept for a
    week or so in the refrigerator. This makes a very large salad, so you
    may want to only make half the amount. If you don't have enough fruit
    juices, add a little water to make the 1 3/4 cups.
