Fried Venison ala Leslie Pressure Cooker -- See note for Slow Cooking
1 lb. cubed or sliced loin of venison 1 1/2 tablespoons Worcestershire sauce
1/4 cup mustard Flour Salt and pepper Oil 1 medium onion*, sliced
Mix Worcestershire sauce and mustard to form paste. Apply to venison, salt and pepper. Let soak for
30 minutes, continue to turn in paste. Flour meat well,
let stand 10 minutes and flour again. Fry meat in oil (350 degrees) until both sides are brown.
Prepare Pressure Cooker, add water to top of bottom pan. Layer venison and onions in pressure
cooker. Set pressure at 15 pounds, cook 15 minutes.

Nita's Note: If you don't have a pressure cooker, this could be done by placing meat in a slow
cooker on LOW for 8 hours. Use just a little water or cream. Check from time to time.
* I would use a sweet type onion. Nita
