Freezing Quiche?

  1. I put together a bacon/artichoke/swiss cheese quiche for
    brunch tomorrow using a new recipe and found myself with far
    more filling than would fit in the 8-inch pie crust it
    claimed to need, so I made a second crust and split the
    filing. Anyone know if I'll end up with a rubbery mess if I
    try to freeze the extra one?

    Will be fine - I always make an extra quiche to freeze.

  4. I'm making quiche as we speak (crabmeat, mushroom, onion,
    parmesan and cheddar cheese), and will be slicing the second
    quiche up and freezing it, so I'll let you know how it goes.

    When I make quiche, I always make two and freeze one - it
    freezes beautifully and is perfect heated up in the
    microwave.
