  1. On a recent Episode of Food 911 they used a smooth
    sided/bottom flan pan. We've been looking for one but can't
    dind one. Any ideas?

    consider using a deep dish pizza pan.

    Sounds like saute pan. For example

    forget my suggestion. That web site does have a lot of
    pans, though.
