    Red Snapper Or Sole Casserole With Lemon And Parsley

    Cooking Time: 25 Minutes

    11/2 lbs. red Snapper Fillets, thawed, if necessary and rinsed under cold
    water
    1/2 lb. Fresh Mushrooms, sliced
    1/2 cup Parmesan or Sharp Cheddar Cheese, freshly grated
    1/2 cup Dry White Wine
    4 Tbsp. Green Pepper, chopped
    3 Tbsp. Lemon Juice, freshly squeezed
    2 Tbsp. Butter or Margarine
    2 Tbsp. Fresh Parsley, finely chopped
    1 Tbsp. Olive Oil
    1/4 tsp. Salt - or to taste
    1/4 tsp. Black Pepper - or to taste

    While oven is pre-heating to 450 F, melt butter in skillet over low heat,
    add mushrooms and 1 Tbsp. lemon juice and saute over medium heat until
    mushrooms are tender. Rub oil over shallow, large glass baking dish,
    sprinkle with grated cheese and place red Snapper Fillets on top of
    cheese. Sprinkle fish with salt and pepper, then add onions and top with
    mushrooms; pour wine over Fillets. Bake (20 minutes), or until fish
    flakes easily when tested with a fork, then sprinkle with lemon juice and
    parsley and serve. Servings Per Recipe: 4-6

    Redfish Italiano

    Cooking Time: 30-40 Minutes

    2 lbs. Redfish Fillets, rinsed in cold water and patted dry
    6-8 Cloves Garlic, minced
    1 Onion, diced
    1 cup favorite Cracker Crumbs
    1 cup Romano Cheese, freshly grated
    3/4 cup Dry White Wine
    3/4 cup Cream
    1/2 cup Seasoned Bread Crumbs
    1/2 cup Butter or Margarine, melted
    1/4 cup Fresh Parsley, finely chopped
    Hot Pepper Sauce - to taste
    Black Pepper, freshly ground - to taste
    Seasoned salt - to taste
    Additional Butter

    Mix crumbs with garlic, onions, melted butter and parsley. Sprinkle a
    layer of crumbs on the bottom of a buttered, glass casserole dish, then
    place a single layer of Redfish Fillets on top of the crumbs and add a
    dash of hot pepper sauce on each fillet along with a dab of butter,
    seasoned salt, and a sprinkling of cheese; continue with fillet layers.
    Pour wine and cream gently over dish, then finish with crumbs and cheese.
    Bake at 400 F (30-40 minutes), or until fish flakes easily with a fork.
