Fish Cakes
1 package (6 oz.) Stove Top Stuffing Mix.
1/3 cup Kraft Mayo Real Mayonnaise
2 cans (6 ounce each) crabmeat, drained and flaked,
or 2 cans (6 ounce each) tuna, drained and flaked.
1/2 cup finely chopped celery
1/2 cup chopped green onion
1/2 cup shredded carrots
1/2 cup finely chopped green pepper
Mix together stuffing mix with 3/4 cup water, mayonnaise, fish, and
vegetables. Cover. Heat a nonstick skillet sprayed with cooking spray on
medium heat; Shape 1/3 cupfuls of the stuffing mixture into patties; add
to skillet in batches. Cook 3 minutes on each side or until golden brown
on both sides, turning over carefully.
Notes on recipe: You can also change the recipe depending on your taste.
Instead of using tuna or crabmeat, you can add salmon, but discard bones
and skin, or you can use tiny cooked shrimp, drained and flaked. Also, 3
tablespoons tartar sauce can be added, 1 tablespoon lemon juice, 2
tablespoons sweet pickled relish, 1 cup shredded Mozzarella cheese, 1 cup
shredded cheddar cheese, or you could add 1/4 cup barbecue sauce. But
whatever way you prepare this recipe, make it your own and enjoy.
