Fish Batter
2 cup white corn meal
4 large Tbsp. salt
3 1/2 Tbsp. baking powder
1 1/2 Tbsp. red pepper
3 Tbsp. paprika
1/4 tsp. sage
6 large Tbsp. oil
5 lb. all-purpose flour
Mix all the ingredients together in a large pan. Sift all together and do
this back and forth for 5 times. May be kept in Tupperware containers or
in Ziploc baggies and placed in freezer. To use on fish or chicken, mix a
little at a time by adding water and making a loose paste. Dip fish or
chicken in batter and fry in deep hot oil until golden brown. Recipe is
one of my mother's old old ones. Should be about 50 years old.
