Eeek! What did I say? I remember zucchini lasagne and Chinese stir-fry... I
think most of them were Dana's, and doing a google to see if I spelt her

Stir-fry would've been out of my head, I've been doing them for so long
they're automatic. For 4 of us, I take maybe 4-6 oz of good beef, or maybe a
little more of something cheaper - turkey breast is a current favourite.
This gets cut into small strips, and marinaded in soy sauce, ginger and
garlic if I'm organised enough! Cut up lots of veg whilst it's sitting into
similar-size pieces - I generally put in a carrot sliced into ribbons, some
greens (maybe Chinese ones : ), plus beansprouts. When everything is ready,
cut some scallions into small pieces, and heat up a large pan (or a wok for
preference) without oil until it's really, really hot. Throw in oil,
scallions and meat, and stir and fry like crazy until the meat is just
cooked. Fish it out, and keep warm whilst you're doing the same with the veg
(not the beansprouts yet). You may need to add a splash of water to
steam/fry the veg if they're not cooking the way you like them just with the
stir-fry process. At the last minute, put the meat, the marinade and the
beansprouts in and warm through. If the sauce looks a little thin, I add a
squirt of low-carb barbeque sauce - not authentic, but quick! The whole
cooking process takes no more than 15 mins, the chopping takes more time.
What do you eat? I think I'm in a rut with my food - maybe we can jog each
other out of them : )
