I have a friend who has just strated MTN Biking. She has done a bunch of riding to date. Tends not to be very aggresive.
I have been out of the "New" bike world for about 4 or 5 years (after working in a shop for about 5 yrs) and was hoping for some input on the current entry level bike.
For instance what the heck is this Deore level. Did it replace STX RC?

Yes Deore replaced STX. However STX and STX RC was never in the same model year as DX. Anyway Deore is improved from STX and STX RC and for entry level MTB is a good choice. If you have a interest in shimaN MTB component history go here: http://www.firstflightbikes.com/shimano.htm
