Will the types(wrapped thinly, thick, soft , hard etc) of handlebar straps affect the performance of the cyclist?

Only in terms of comfort. Go for a 'cork' (synthetic) type tape on the road as this has padding and doesn't become slippy when wet.
On the track go for a cloth type tape, as grip rather than padding is important. Thin cloth tapes alow you to feel and grip the bar more firmly.
MTB is down to preferance but padding and grip in all conditions is a must.
