  1. This is one of the easiest recipes I make, and oh so good!
    Can turn out *really* spicy depending on what brand of
    spice you use.

    Easy Tortilla Soup

    Makes 4 servings

    1 package taco spice (I prefer Pioneer Brand, but have used
    McCormick with good results) 1 can stewed tomatoes (14.5 oz)
    1 Tbsp fresh cilantro (or more, to your taste) 4 cups
    chicken broth 1 whole chicken breast, cooked and shredded
    Unsalted tortilla chips (salted is ok in a pinch)

    Simmer broth, tomatoes, and taco spice for 10 minutes. Add
    cilantro and simmer 5 more minutes. Add chicken and simmer 5
    more minutes. Add chicken and simmer 5 more minutes. Add
    tortilla chips just before serving.

    Recipe doubles or triples easily.
