I'm in grad school, I have two young sons, I only finished chemo 13
months ago, I don't do elaborate cooking these days.
Today we ate: a Niman ranch boneless ham - basically heated it up in
the oven. It is apple smoked, nitrite free, and delicious. DOesn't have
that barnyard smell some ham has. Tender texture. Lovely light smoky
flavor.
Russian fingerling potatoes (organic no less) - roasted on a cookie
sheet one tier below the ham; I drizzled them with olive oil, sprinkled
with salt, rolled 'em around and stuck 'em in the oven. They were
buttery and slightly brown in spots -delicious.
Blanched broccoli with olive oil.
Mache, spring green and spinach, homemade vinaigrette, a sliced carrot
tossed in.
A little rosemary bread toast with butter. The bread was not the best
ever but it was okay.
Dessert was oranges. Sorry. We ate so richly on our recent anniversary
that I felt no need to have a sweet today. The kids ate Easter candy
earlier, too.
The quality of the ingredients meant I enjoyed the food enormously.
It's worth it to my tastebuds to spend $2 a pound on good potatoes, and
nearly $6 a pound on drug-free ham. I don't have to doll up the
ingredients when they are so good in of themselves.
