  1. Easy Chicken and Noodle Bake

    1 package frozen vegetable mixture
    1 package Knorr Parmesan flavor pasta
    Vegetable oil spray or 2 tbs. olive oil
    4 boneless, skinless chicken breasts
    salt, seasoned salt, paprika, pepper to taste
    1 can mushrooms, drained
    1 clove garlic, chopped
    1 small onion, thinly sliced
    2 green onions, chopped
    4 oz. shredded cheese
    (optional)

    Preheat oven to 350 degrees. Spray a round or square baking dish with
    vegetable oil spray or add a little olive oil. Prepare frozen vegetables
    as directed on package. Drain and set aside. Prepare pasta mix as
    directed on package. While pasta cooks, heat skillet sprayed with
    vegetable oil spray or a little olive oil. Add remaining vegetables and
    saute until beginning to brown. Remove to bowl. Season chicken breasts on
    both sides. Add more spray or olive oil to skillet and add chicken
    breasts. Saute for 5-6 minutes per side. Remove to plate, let cool
    slightly and slice. Mix all ingredients with cooked pasta and pour into
    baking dish. Bake 15 minutes, then top with cheese, if using. Bake 5-10
    minutes longer until cheese is melted and chicken mixture is brown and
    bubbly. Remove from oven and let sit for 7-8 minutes to firm up before
    serving. Delicious served with mini blueberry muffins.

    Serves 4.
