  1. Run the tines of a fork down the length of an unpeeled cucumber, all
    the way around. Slice into 1/8-inch thick coins. Drain on paper
    towels or a flour sack towel.

    Mix a can of drained baby cocktail shrimp with enough mayonnaise to
    hold the shrimp together. Add very finely minceded scallions to the
    mixture. A tiny bit of lemon juice might be a nice touch, too.

    Seasonings are totally at the cook's discretion. Heck, you could even
    use fresh shrimp, but I think the softer texture of the canned stuff
    lends itself better to spreading. Just my worthless opinion. ;o)

    Spread shrimp mixture on the cucumbers. Garnish with something if
    you're feeling glamorous.

    no.

    I'd most likely make a shrimp dip out the shrimp mayo and a like homemade
    cocktail sauce. And mix up the veggies using Dikon as well as cucke
    coins.
