Dottie's Spinach
Serves 6

1 stick (4 ounces) butter -- preferably organic
2 yellow onions -- diced
1 large garlic bulb -- cloves separate, peeled and minced
- Kosher salt
- Generous pinch of ground cayenne, plus more to taste
2 pounds fresh spinach -- wilted and chopped
3/4 pounds best-quality cheddar (see Note below) -- grated
1/2 cup fresh bread crumbs -- lightly toasted
Butter a baking dish and preheat the oven to 350 degrees. Melt half the
butter in a large saute pan set over medium low heat, add the onions and
saute until limp and fragrant, about 10 minutes; do not let them brown.
Add the garlic, cook for 2 minutes, season generously with salt and add a
pinch or two of cayenne. Add the chopped spinach, stir and cook for 2 to
3 minutes so that the flavors meld. Fold in the cheese, season with salt
and turn the mixture into the baking dish. Spread the bread crumbs over
the top and dot with the remaining butter. Bake for 30 minutes, until
the mixture is hot and bubbly and the bread crumbs are golden brown.
Remove from the oven and let rest 5 to 10 minutes before serving. Makes 6
to 8 servings
Note: Supper, located in Plaza Farms (106 Matheson St., Santa Rosa),
sells a wonderful two-year-old cheddar that is perfect in this dish.
Recipe Notes
This robust dish, is almost ridiculously good. Serve it as a side
dish with something uncomplicated -- simple roasted chicken, for
example -- alongside so that it's bold flavors and rich texture can
have center stage.
